You can tell your girlfriend that I married a Santen~o (pardon... borrowed laptop and can't find the proper key) Coffee this way was his morning treat when the Quesos Pedasi truck had been by the house the day before. I prefer my queso blanco with fruits, a bit of carne ahumado, and freshly made vinuelos, called pastelitos de maiz nuevo in some parts of the country. Should have used that longer name since I know how to spell that one. Luckily there is a small restaurante nearby that served these things so I can have them now and then. The looks I get.... I finally explained that I married a Santen~o, followed by a understanding nod, and, when out of earshot, a slow side to side shake of the head while mumbling, "pobrecita".

My past life as a school teacher causes uncontrolable urges to correct people. My apologies. Today is the anniversary of my arrival back to Panama seven years ago. Old habits die hard they say...... I suppose a celebration would be appropriate. That is one thing I have learned in Panama.... any reason to have a party.

This is a custom but not with cheddar. It is queso blanco, a locally made cheese which has a flavor more like cottage cheese. The coffee has sugar and condensed milk, usually Ideal. The cheese does not melt in the heat of the coffee but gets rather rubbery and soaks up the flavor of the drink.
